How to produce Yam flour from yam tuber



 Yam flour is powdered starch widely used in food preparation. Normally white, the flour is commonly used in African dishes, such as Utaraji, amala etc.
What is Yam:
Yam is the edible starchy tuber of a climbing plant, widely distributed in tropical and subtropical countries.  There are over 300 types of yams and 95 percent of these crops are grown in Africa and Asia continents.  For the interest of those who do not know what yam look like, here is image of true yam. Major cultivated species,   Dioscorea rotundata and D. cayenensis ,   D. alata, D. opposite, D. bulbifera, D. esculenta, D. dumetorum, D. trifida

Raw Materials For Yam Flour
 The only raw material for pounded yam flour production is Yam Tubers. The yam tubers can be sourced locally from the local farmers in the villages. Note that the quality of yam tubers used for production will tell on the quality of your pounded yam flour. So go for the best the yam variety.
Machinery and Equipment

Equipment can be fabricated locally. There are as follows:- Slicer, Dryer, Hammer mill, wood paddles. The following are for foreign: Sealing machine, Weighing scale, Sealing machineknives, plastic containers, Polythene or nylon bags.

Making Yam Flour
 Steps of yam flour production.
